Decadent Amaretto and blue honeyberry balls

Perfect bites to surprise the taste buds of your hosts or guests!

Yield: 10-12 balls
Preparation: 15 minutes
Cooking: 4 minutes

  • 1 cup (250 ml) pitted dates
  • 1/4 cup (60 ml) amaretto
  • 1/4 cup (60 ml) dark chocolate, in pieces
  • 1/4 cup (60 ml) large-flake, old-fashioned rolled oats
  • 1/4 cup (60 ml) unsalted natural almonds, chopped 
  • 1/4 cup (60 ml) frozen cherries

Choice of toppings:
  • Cocoa powder
  • Chopped dried cranberries and unsalted pistachios
  • Shredded unsweetened coconut 

  1. Place dates and amaretto in a bowl and heat for 2 minutes in the microwave. Pour into food processor and set aside.
  2. In the same bowl, melt chocolate in the microwave for about 90 seconds. Transfer to food processor bowl, then add oatmeal and almonds. Process for 15 to 30 seconds until mixture is homogeneous. Refrigerate mixture for 15 minutes.
  3. Shape mixture into 10 to 12 balls of about 20 ml (4 teaspoons), placing 6 frozen blue honeyberries in the centre of each. 
  4. Dip balls in the topping of your choice. Refrigerate at least 1 hour before offering the balls as a gift. Can be stored for 1 week in the refrigerator or 3 months in the freezer.
